Incidental exposure to heat such as a tea kettle or coffee cup is no problem, but oven temperature pots and pans should not be directly set on top of a copper countertop.  Copper is a tremendous heat conductor, therefore, some distortion can occur with prolonged contact over 200 F.  A block out in the countertop to accommodate a heat sink or chopping block is an easy and practical solution.
